  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 tablespoon cinnamon (for swirl)
  • 2 tablespoons sugar (for swirl)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it or lining with parchment paper.
  3. Mash the ripe bananas in a mixing bowl until smooth.
  4. Mix in granulated sugar, brown sugar, and melted butter until well-combined.
  5. Add eggs and vanilla, mixing until just combined.
  6. Whisk together flour, baking soda, salt, and ground cinnamon in another bowl.
  7. Fold the dry ingredients into the wet ingredients gently.
  8. Mix together cinnamon and sugar for the swirl.
  9. Layer half the batter in the pan, sprinkle with half the swirl mix, then add remaining batter and swirl mix. Use a knife to create swirls.
  10. Bake for 55-65 minutes, or until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
