Ingredients

  • 1 lb Gnocchi
  • 1 cup Pesto Sauce
  • 1 cup Heavy Cream
  • ½ cup grated Parmesan Cheese
  • 2 tablespoons Olive Oil
  • Salt and Pepper (to taste)
  • Fresh Basil Leaves (for garnish)

Instructions

  1. Boil the Gnocchi in salted water until they float, about 2-3 minutes. Reserve a cup of cooking water.
  2. Make the Creamy Pesto Sauce by heating olive oil, adding pesto, and stirring for a minute. Then pour in the heavy cream and simmer for 3-4 minutes.
  3. Combine the cooked gnocchi with the sauce, adding reserved pasta water as needed for creaminess. Season with salt and pepper.
  4. Add grated Parmesan cheese and stir until melted.
  5. Plate and garnish with fresh basil leaves before serving.

Notes

Try adding sautéed vegetables or protein for added nutrition. For a lighter version, substitute heavy cream with half-and-half or a plant-based alternative.
