- 1 lb Gnocchi
- 1 cup Pesto Sauce
- 1 cup Heavy Cream
- ½ cup grated Parmesan Cheese
- 2 tablespoons Olive Oil
- Salt and Pepper (to taste)
- Fresh Basil Leaves (for garnish)
Instructions
- Boil the Gnocchi in salted water until they float, about 2-3 minutes. Reserve a cup of cooking water.
- Make the Creamy Pesto Sauce by heating olive oil, adding pesto, and stirring for a minute. Then pour in the heavy cream and simmer for 3-4 minutes.
- Combine the cooked gnocchi with the sauce, adding reserved pasta water as needed for creaminess. Season with salt and pepper.
- Add grated Parmesan cheese and stir until melted.
- Plate and garnish with fresh basil leaves before serving.
Notes
Try adding sautéed vegetables or protein for added nutrition. For a lighter version, substitute heavy cream with half-and-half or a plant-based alternative.
