- 1 cup Black beans (dried or canned)
- 2 tablespoons Olive oil
- 1 Onion, chopped
- 2–3 cloves Garlic, minced
- 1 Bell pepper (red, green, or yellow), chopped
- 1 teaspoon Cumin
- 2 Bay leaves
- 4 cups Vegetable broth or water
- Salt and pepper, to taste
- Juice of 1 Lime
Instructions
- Soak the black beans overnight in a bowl of water if using dried beans.
- Drain and rinse the soaked beans under cool water.
- Sauté the chopped onion and bell pepper in olive oil over medium heat for about 5 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Sprinkle in the cumin and let it toast for about a minute.
- Combine the beans and liquid, covering them by about an inch with broth or water.
- Simmer on low heat, covered, for 25-30 minutes for canned beans or 1-1.5 hours for dried beans.
- Taste and adjust seasoning, adding lime juice before serving.
- Serve warm, garnished with fresh cilantro and avocado if desired.
