A delightful homemade jam combining the sweetness of ripe peaches and the tanginess of fresh raspberries.


Ingredients

  • 4 cups ripe peaches, chopped
  • 2 cups fresh raspberries
  • 2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1/2 teaspoon vanilla extract (optional)
  • 1 tablespoon cornstarch

Instructions

  1. Prepare your fruits: Peel and pit the peaches, chop them into small chunks, and rinse the raspberries gently under cold water.
  2. Combine and cook: In a large pot, combine the diced peaches, raspberries, sugar, lemon juice, and cornstarch. Stir gently to coat the fruits in sugar and let sit for 30 minutes.
  3. Bring to a boil: Cook over medium heat, stirring occasionally, until boiling. Reduce heat and simmer for 20-30 minutes until thickened.
  4. Add flavor: Stir in vanilla extract when the jam has reached desired thickness.
  5. Jar it up: Ladle the jam into sterilized jars, leaving 1/2 inch headspace, clean rims, and seal with lids. Flip jars upside down for a few minutes to create a vacuum seal.
  6. Cool and store: Let jars cool to room temperature, then store in the fridge or process in a hot water bath for longer shelf life.

Notes

Use frozen peaches if fresh ones aren’t available, and try adding spices or herbs for unique flavors.
