- 1 lb Steak (flank, sirloin, or ribeye)
- 4 large Tortillas (flour or corn)
- 2 cups shredded Cheese (Monterey Jack and Cheddar blend)
- 1 cup diced Bell Peppers (red, yellow, or green)
- 1 medium Onion (diced)
- 2 cloves Garlic (minced)
- 2 tablespoons Olive Oil
- 1 tablespoon Taco Seasoning
- Fresh Cilantro (for garnish)
- Sour Cream or Guacamole (for serving)
Instructions
- Season your steak generously on both sides with taco seasoning, salt, and pepper.
- Preheat the griddle to medium-high heat with a drizzle of olive oil.
- Sear the steak for about 3-4 minutes on one side, then flip and cook for another 2-3 minutes for medium-rare.
- Rest the steak for at least 5 minutes covered with foil.
- Toss in diced onions and bell peppers on the same griddle and sauté until soft, about 5-7 minutes.
- Add minced garlic just a minute before the veggies are finished.
- Slice the rested steak against the grain into thin strips.
- Layer cheese, sautéed veggies, and steak on one half of a tortilla, then fold over.
- Grill the quesadilla on the griddle for 2-3 minutes on each side until golden brown and crispy.
- Cut into wedges and serve with sour cream or guacamole.
