Description

Ingredients

  • Carrots (1 pound), fresh, peeled and sliced
  • Brown Sugar (2 tablespoons)

  • Salt (1/2 teaspoon)
  • Pepper (1/4 teaspoon)
  • Fresh Thyme (1 teaspoon, optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prep the carrots by washing, peeling, and slicing them into uniform pieces.
  3. Make the coating by combining olive oil, brown sugar, salt, and pepper in a large bowl.
  4. Toss the carrots in the brown sugar mixture until well-coated.
  5. Spread the carrots in a single layer on a parchment-lined baking sheet.
  6. Roast for 25-30 minutes, tossing halfway through, until fork-tender and golden brown.
  7. Garnish and serve with extra olive oil and fresh herbs, if desired.
