Ingredients
- Carrots (1 pound), fresh, peeled and sliced
- Brown Sugar (2 tablespoons)
- Olive Oil (2 tablespoons)
- Salt (1/2 teaspoon)
- Pepper (1/4 teaspoon)
- Fresh Thyme (1 teaspoon, optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Prep the carrots by washing, peeling, and slicing them into uniform pieces.
- Make the coating by combining olive oil, brown sugar, salt, and pepper in a large bowl.
- Toss the carrots in the brown sugar mixture until well-coated.
- Spread the carrots in a single layer on a parchment-lined baking sheet.
- Roast for 25-30 minutes, tossing halfway through, until fork-tender and golden brown.
- Garnish and serve with extra olive oil and fresh herbs, if desired.
Notes
For a zesty twist, add lemon or orange zest.
