A comforting and flavorful pasta salad featuring chicken, crispy bacon, and fresh vegetables.
Ingredients

- 8 oz rotini or penne pasta
- 2 cups cooked shredded chicken
- 6 slices cooked bacon, crumbled
- 1 cup diced bell peppers (red, yellow, green)
- 1/2 cup diced red onion
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the pasta: In a large pot, bring salted water to a boil. Add your pasta and cook according to package instructions until al dente. Drain and rinse under cold water.
- Prep the chicken and bacon: Shred the rotisserie chicken and cook bacon until crispy. Crumble it into pieces.
- Chop your veggies: Dice the bell peppers and red onion uniformly.
- Prepare the dressing: In a bowl, mix mayonnaise, Dijon mustard, salt, and pepper to taste.
- Combine everything: In a large bowl, mix pasta, chicken, bacon, bell peppers, red onion, and cheese. Pour dressing and gently toss.
- Chill: Cover and refrigerate for at least 30 minutes.
- Serve it up: Serve chilled or at room temperature, garnished with herbs if desired.
