Ingredients

  • 8 oz rotini or penne pasta
  • 2 cups cooked shredded chicken
  • 6 slices cooked bacon, crumbled
  • 1 cup diced bell peppers (red, yellow, green)
  • 1/2 cup diced red onion
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: In a large pot, bring salted water to a boil. Add your pasta and cook according to package instructions until al dente. Drain and rinse under cold water.
  2. Prep the chicken and bacon: Shred the rotisserie chicken and cook bacon until crispy. Crumble it into pieces.
  3. Chop your veggies: Dice the bell peppers and red onion uniformly.
  4. Prepare the dressing: In a bowl, mix mayonnaise, Dijon mustard, salt, and pepper to taste.
  5. Combine everything: In a large bowl, mix pasta, chicken, bacon, bell peppers, red onion, and cheese. Pour dressing and gently toss.
  6. Chill: Cover and refrigerate for at least 30 minutes.
  7. Serve it up: Serve chilled or at room temperature, garnished with herbs if desired.
