- 2 cups penne pasta
- 1 cup cooked chicken breast, shredded
- 2 cups romaine lettuce, chopped
- 1/2 cup Caesar dressing
- 1/2 cup grated Parmesan cheese
- 1 cup croutons
- 1 tablespoon olive oil
Instructions
- Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add your penne pasta and cook according to package instructions until al dente (usually about 9-11 minutes). Drain and rinse under cold water to stop the cooking process. Add a splash of olive oil after draining to prevent sticking.
- Prep the Chicken: Season chicken breast with salt, pepper, and olive oil. Grill or roast until cooked (about 6-8 minutes per side). Let it rest, then slice or shred.
- Mix the Salad: In a large bowl, toss together the cooked pasta, chicken, chopped romaine, and Caesar dressing. Adjust dressing to taste.
- Add the Cheese: Sprinkle in grated Parmesan and toss everything together gently.
- Prepare to Serve: Grease oven-safe cups with olive oil and fill with pasta mix.
- Bake: Preheat oven to 350°F (175°C). Bake cups for about 15-20 minutes. Optionally, broil for an extra minute.
- Top It Off: Before serving, add croutons and a sprinkle of Parmesan.
