Ingredients

  • About 2 cups cooked chicken breast, shredded or cubed
  • ½ cup Greek yogurt
  • 2 tablespoons Dijon mustard
  • 1 stalk celery, finely chopped
  • 1 cup red grapes, halved
  • 2 stalks green onions, finely chopped
  • 810 large romaine or butter lettuce leaves
  • 2 tablespoons fresh dill, chopped
  • Salt & pepper to taste

Instructions

  1. Prep the chicken by shredding or chopping your cooked chicken breast into bite-sized pieces.
  2. Mix the base by combining the chicken, Greek yogurt, and Dijon mustard in a large bowl.
  3. Add the chopped celery, halved grapes, and diced green onions to the bowl.
  4. Season with fresh dill, salt, and pepper to taste.
  5. Rinse the lettuce leaves under cold water and gently pat them dry.
  6. Assemble the boats by scooping the chicken salad into the center of each lettuce leaf.
  7. Drizzle with extra Greek yogurt and garnish with fresh dill for presentation.
