- About 2 cups cooked chicken breast, shredded or cubed
- ½ cup Greek yogurt
- 2 tablespoons Dijon mustard
- 1 stalk celery, finely chopped
- 1 cup red grapes, halved
- 2 stalks green onions, finely chopped
- 8–10 large romaine or butter lettuce leaves
- 2 tablespoons fresh dill, chopped
- Salt & pepper to taste
Instructions
- Prep the chicken by shredding or chopping your cooked chicken breast into bite-sized pieces.
- Mix the base by combining the chicken, Greek yogurt, and Dijon mustard in a large bowl.
- Add the chopped celery, halved grapes, and diced green onions to the bowl.
- Season with fresh dill, salt, and pepper to taste.
- Rinse the lettuce leaves under cold water and gently pat them dry.
- Assemble the boats by scooping the chicken salad into the center of each lettuce leaf.
- Drizzle with extra Greek yogurt and garnish with fresh dill for presentation.
