- 2 lbs. Yukon Gold potatoes
- 1 cup mayonnaise
- 3 tablespoons Dijon mustard
- 1 tablespoon capers, rinsed and roughly chopped
- 2 stalks celery, finely chopped
- 1/2 small red onion, finely chopped
- Salt and pepper to taste
- Fresh dill or parsley for garnish (optional)
Instructions
- Prepare the Potatoes: Wash and chop the Yukon Gold potatoes into 1-inch chunks. Place in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over medium-high heat.
- Boil the Potatoes: Reduce heat and simmer for 15-20 minutes, until fork-tender. Drain and let cool.
- Mix the Dressing: In a mixing bowl, combine mayonnaise, Dijon mustard, chopped capers, salt, and pepper. Whisk until smooth.
- Toss Everything Together: Add cooled potatoes, chopped celery, and red onion to the dressing. Gently fold together without mashing.
- Taste and Adjust: Taste for seasoning and adjust as needed before chilling.
- Chill in the Fridge: Cover and refrigerate for at least an hour before serving.

For best flavor, prepare a day in advance. Can customize with additional herbs or ingredients.
