Ingredients

  • 2 lbs. Yukon Gold potatoes
  • 1 cup mayonnaise
  • 3 tablespoons Dijon mustard
  • 1 tablespoon capers, rinsed and roughly chopped
  • 2 stalks celery, finely chopped
  • 1/2 small red onion, finely chopped
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish (optional)

Instructions

  1. Prepare the Potatoes: Wash and chop the Yukon Gold potatoes into 1-inch chunks. Place in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over medium-high heat.
  2. Boil the Potatoes: Reduce heat and simmer for 15-20 minutes, until fork-tender. Drain and let cool.
  3. Mix the Dressing: In a mixing bowl, combine mayonnaise, Dijon mustard, chopped capers, salt, and pepper. Whisk until smooth.
  4. Toss Everything Together: Add cooled potatoes, chopped celery, and red onion to the dressing. Gently fold together without mashing.
  5. Taste and Adjust: Taste for seasoning and adjust as needed before chilling.
  6. Chill in the Fridge: Cover and refrigerate for at least an hour before serving.

Notes
