Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Mix together the flour, baking powder, and salt in a large mixing bowl.
- Cream the melted butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Then pour in the milk, orange juice, and zest.
- Combine the dry mixture into the wet mixture, folding until just combined to avoid overmixing.
- Incorporate the chopped cranberries and optional nuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for about 60 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For a vegan option, substitute eggs with flax eggs. Also, experiment with added spices like cinnamon or lemon juice for a twist.
