- 2 boneless, skinless chicken breasts
- 8 oz pasta of your choice
- 1 cup sun-dried tomatoes (packed in oil)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Start by boiling a large pot of salted water. Add your pasta and cook according to the package instructions until al dente.
- In a large skillet, heat up the olive oil over medium-high heat. Add the chicken breasts and season with salt and pepper. Cook for about 6-7 minutes on each side until golden and cooked through.
- Once your chicken is cooked, remove it from the skillet and let it rest. In the same skillet, add more olive oil if needed and sauté the minced garlic for about 30 seconds until fragrant. Toss in the sun-dried tomatoes and let them cook for a minute.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and creamy. Adjust with reserved pasta water if too thick.
- Slice the rested chicken and add it back to the skillet, along with the cooked pasta. Toss to coat in the creamy sauce, adding more salt and pepper to taste.
- Serve immediately, garnished with fresh basil or parsley and extra Parmesan if desired.
Notes
For added flavor, consider adding a pinch of red pepper flakes or mixing in basil pesto in the sauce.
