Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup Arborio rice
- 3 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 small onion, diced
- 3 cloves of garlic, minced
- 1 cup frozen peas (or any veggies of choice)
- Salt and pepper, to taste
Instructions
- Sear the chicken in a large skillet or pot with olive oil over medium-high heat for about 5-6 minutes on each side until golden brown.
- Remove the chicken from the pan and add the diced onion, sautéing for about 2-3 minutes until softened. Add the minced garlic and sauté for an additional minute.
- Add the Arborio rice to the pan and toast for about 2 minutes.
- Pour in the chicken broth and heavy cream, stirring to combine, and return the chicken to the pan.
- Cover the pan and let everything simmer for about 20-25 minutes or until the rice is cooked.
- Stir in the grated Parmesan cheese and frozen peas; mix until well combined.
- Serve garnished with parsley or additional cheese if desired.
Notes
For a vegetarian option, substitute chicken with cannellini beans or chickpeas. This dish can be made ahead and reheated as needed.
