12 oz pasta (penne or rigatoni)
1 lb Italian sausage (mild or spicy)
1 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
Salt and pepper to taste
Optional: fresh basil for garnish
Cook pasta according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add sausage, breaking it up as it cooks.
Add bell peppers and onions, sauté until soft. Stir in garlic and cook 1 more minute.
Lower heat, add cream and Parmesan. Stir until smooth and bubbly.
Add pasta to the skillet and toss to coat. Season with salt and pepper.
Garnish with basil and serve warm.
