- 4 medium Potatoes (Russet or Yukon Gold)
- 1 lb Thinly Sliced Beef (ribeye or sirloin)
- 1 Onion (yellow preferred)
- 1 Green Bell Pepper
- 1 cup Cheese (Provolone or Cheddar)
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 2 tbsp Olive Oil
- Salt and Pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Prepare the potatoes by scrubbing them and slicing into wedges, about 1/2-inch thick.
- Toss the wedges with olive oil, garlic powder, onion powder, salt, and pepper, coating evenly.
- Bake the wedges in the preheated oven for 30-35 minutes, flipping halfway through.
- Heat a skillet over medium-high heat and add olive oil and thinly sliced beef, sautéing for about 4-5 minutes.
- Add onions and green peppers to the skillet, cooking for another 3-4 minutes until tender.
- Sprinkle the beef and vegetable mixture over the wedges and top with cheese, returning to the oven for 5-7 minutes until cheese is melted.
- Broil for an additional 2 minutes if you want a crispy layer.
Notes
For extra flavor, consider adding smoked paprika to the seasoning. Serve with ranch or barbecue sauce for added zing.
