- 4–5 medium Fresh Tomatoes
- 1 cup Ricotta Cheese
- 1 cup Sharp Cheddar Cheese, shredded
- 1 cup Mozzarella Cheese, shredded
- 1/2 cup Parmesan Cheese, grated
- 1 cup Breadcrumbs
- 2 tbsp Olive Oil
- 1/4 cup Fresh Basil, chopped
- 2 cloves Garlic, minced
- Salt and Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice your tomatoes and sprinkle them with salt, allowing them to drain for about 10 minutes.
- In a large bowl, combine the ricotta, cheddar, mozzarella, and half of the Parmesan. Mix until creamy and well-blended.
- Add the minced garlic, chopped basil, salt, and pepper to taste.
- Lay a pre-baked pie crust onto a pie dish and spread a layer of drained tomatoes at the bottom.
- Spoon the cheesy mixture over the tomatoes, spreading it evenly.
- In a small bowl, mix the breadcrumbs, remaining Parmesan, and olive oil. Sprinkle this mixture over the cheesy layer.
- Bake for about 30–35 minutes or until the topping is golden brown and the cheese is bubbling.
- Let the pie cool for about 10 minutes before serving.
Notes
Feel free to use gluten-free pie crust for a lighter option and add herbs or meats for variations.
