- 8 frozen waffles
- 2 boneless, skinless chicken breasts
- 4 strips of bacon
- 1 cup shredded cheddar cheese
- 4 eggs
- 1 cup whole milk
- 1/4 cup maple syrup
- 1 teaspoon baking powder
- Salt, to taste
- Pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat your oven to 375°F (190°C).
- Cook your bacon in a skillet over medium heat until crispy (about 8-10 minutes).
- Add the cubed chicken breast to the skillet with bacon grease and sauté until fully cooked (about 5-7 minutes), seasoning with salt, pepper, garlic powder, and onion powder.
- Break the frozen waffles into bite-sized pieces in a large bowl.
- Whisk together the eggs, milk, and maple syrup in another bowl.
- Add the cooked chicken, crispy bacon, and half of the cheese to the egg mixture, then pour over the waffle pieces, and fold everything together.
- Grease a 9×13 inch baking dish with cooking spray or butter, transfer the mixture into the dish, pressing down gently to distribute.
- Top with the remaining cheese and bake for about 30-35 minutes, until the top is golden brown.
- Let it cool for a couple of minutes before slicing.
Notes
This dish can be prepared ahead of time and stored in the refrigerator overnight before baking.
