Description

A comforting and delicious Chicken Bacon Waffle Bake, perfect for brunches or weeknight dinners, combining crispy waffles with savory chicken and bacon.


Ingredients

  • 8 frozen waffles
  • 2 boneless, skinless chicken breasts
  • 4 strips of bacon
  • 1 cup shredded cheddar cheese
  • 4 eggs
  • 1 cup whole milk
  • 1/4 cup maple syrup
  • 1 teaspoon baking powder
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook your bacon in a skillet over medium heat until crispy (about 8-10 minutes).
  3. Add the cubed chicken breast to the skillet with bacon grease and sauté until fully cooked (about 5-7 minutes), seasoning with salt, pepper, garlic powder, and onion powder.
  4. Break the frozen waffles into bite-sized pieces in a large bowl.
  5. Whisk together the eggs, milk, and maple syrup in another bowl.
  6. Add the cooked chicken, crispy bacon, and half of the cheese to the egg mixture, then pour over the waffle pieces, and fold everything together.
  7. Grease a 9×13 inch baking dish with cooking spray or butter, transfer the mixture into the dish, pressing down gently to distribute.
  8. Top with the remaining cheese and bake for about 30-35 minutes, until the top is golden brown.
  9. Let it cool for a couple of minutes before slicing.

Notes

This dish can be prepared ahead of time and stored in the refrigerator overnight before baking.
