Instructions
- Preheat your oven to 425°F (220°C).
- Prep the carrots by peeling and trimming them to about 6 inches long.
- Season the carrots in a large bowl with olive oil, salt, and pepper.
- Arrange the carrots in a single layer on a lined baking sheet.
- Roast the carrots for 25-30 minutes, flipping halfway through.
- Add the parmesan in the last 5 minutes of roasting.
- Garnish with fresh herbs before serving.
