  • Salt, to taste
  • Pepper, to taste
  • Fresh Herbs (e.g., parsley or thyme), chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prep the carrots by peeling and trimming them to about 6 inches long.
  3. Season the carrots in a large bowl with olive oil, salt, and pepper.
  4. Arrange the carrots in a single layer on a lined baking sheet.
  5. Roast the carrots for 25-30 minutes, flipping halfway through.
  6. Add the parmesan in the last 5 minutes of roasting.
  7. Garnish with fresh herbs before serving.
