Ingredients

- 2 cups fresh spinach, chopped
- 8 oz cream cheese, softened
- 1 cup cheddar cheese, shredded
- 1 large egg
- 1 package puff pastry sheets, thawed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Sauté the onions and garlic in olive oil for 3-4 minutes until translucent, then add garlic and cook for 1 minute.
- Prepare the spinach by cooking fresh or thawed frozen spinach until wilted.
- Combine the onion, spinach, cream cheese, cheddar cheese, and egg in a mixing bowl. Season with salt and pepper.
- Roll out the puff pastry and cut into 3-inch circles.
- Fill each circle with a tablespoon of the spinach and cheese mixture.
- Seal the pastry by folding over and crimping the edges.
- Bake on a parchment-lined baking sheet for 15-20 minutes until golden brown.
- Cool for a few minutes before serving.
Notes
These puffs can be made ahead and frozen uncooked. Bake directly from frozen when ready to enjoy.
