Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare cupcake liners in a muffin tin.
  3. Mix the dry ingredients in a bowl—flour, baking powder, and salt.
  4. Cream the butter and sugar until fluffy, about 2-3 minutes.
  5. Add the eggs one at a time, mixing well after each.
  6. Introduce key lime juice, lime zest, and vanilla; mix until combined.
  7. Combine the dry and wet mixtures until just combined, careful not to overmix.
  8. Fill the liners about two-thirds full with batter.
  9. Bake for 18-20 minutes, until a toothpick comes out clean.
  10. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  11. Make the frosting by beating heavy cream, powdered sugar, and lime zest until stiff peaks form.
