A delightful cake featuring luscious nectarines on a caramel base, perfect for summer gatherings.


Ingredients

  • 4 ripe nectarines
  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a round 9-inch cake pan with butter or parchment paper.
  3. Create the caramelized nectarines by melting 1/2 cup of butter and 3/4 cup of brown sugar in a saucepan, then pour into pan.
  4. Arrange sliced nectarines in the pan over the caramel.
  5. Mix flour, baking powder, and salt in a bowl. In another bowl, whisk eggs and mix with the butter, milk, and vanilla.
  6. Combine wet and dry ingredients until just combined.
  7. Pour the batter over the nectarines in the pan.
  8. Bake for 35-40 minutes until a toothpick comes out clean.
  9. Cool for 10 minutes, then flip onto a plate.

Notes

Serve warm with vanilla ice cream or whipped cream. Can be made in advance and stored at room temperature for up to 3 days.
