A delightful cake featuring luscious nectarines on a caramel base, perfect for summer gatherings.

- 4 ripe nectarines
- 1/2 cup unsalted butter
- 3/4 cup brown sugar
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a round 9-inch cake pan with butter or parchment paper.
- Create the caramelized nectarines by melting 1/2 cup of butter and 3/4 cup of brown sugar in a saucepan, then pour into pan.
- Arrange sliced nectarines in the pan over the caramel.
- Mix flour, baking powder, and salt in a bowl. In another bowl, whisk eggs and mix with the butter, milk, and vanilla.
- Combine wet and dry ingredients until just combined.
- Pour the batter over the nectarines in the pan.
- Bake for 35-40 minutes until a toothpick comes out clean.
- Cool for 10 minutes, then flip onto a plate.
Notes
Serve warm with vanilla ice cream or whipped cream. Can be made in advance and stored at room temperature for up to 3 days.
