- 1 pound Chicken Breast
- 2 tablespoons Olive Oil
- Juice from 1 large Lemon
- 2 cloves Garlic, minced
- 1 tablespoon Oregano, dried
- 1 cup Greek Yogurt
- 1 medium Cucumber, grated and drained
- 1/3 cup Pistachios, chopped
- 1 tablespoon Dill, chopped
- Salt, to taste
- 4 large Whole Wheat Tortillas
- 2 cups Spinach or Mixed Greens
- 1 cup Tomatoes, diced
- 1 small Red Onion, thinly sliced
Instructions
- Marinate the Chicken: In a medium bowl, combine olive oil, lemon juice, minced garlic, and oregano. Add the chicken breasts and toss until well coated. Cover and let it marinate for at least 30 minutes, or up to overnight.
- Prepare the Pistachio Tzatziki: In another bowl, mix Greek yogurt, grated cucumber, chopped pistachios, dill, and a pinch of salt. Taste and adjust salt as needed.
- Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6–7 minutes per side until cooked through. Let it rest before slicing.
- Assemble the Wraps: Lay a tortilla flat, spread tzatziki down the center, top with greens, sliced chicken, diced tomatoes, and red onion. Drizzle extra tzatziki on top.
- Wrap It Up: Fold in the sides of the tortilla, then roll tightly from the bottom. Secure with a toothpick or wrap for serving.
Notes
These wraps can be made gluten-free using gluten-free wraps or lettuce. Tzatziki can be made in advance and lasts up to three days in the fridge.
