Instructions
- Prepare your fruit: Start by hulling the strawberries and peeling the peaches. Chop them and let them mingle together in a bowl.
- Get the pot ready: In a large saucepan over medium heat, combine strawberries and peaches, lemon juice, and honey. Stir gently.
- Bring the mixture to a gentle simmer, stirring frequently to prevent sticking.
- Allow the mixture to simmer for about 20-25 minutes until the fruit breaks down.
- Mash for texture if desired, using a potato masher for a smoother consistency.
- Taste and adjust sweetness with honey or salt if needed.
- Transfer the jam to clean, sterilized jars while hot, leaving space at the top.
- Cool at room temperature until sealed, or process as needed for canning.
Notes
Consider using agave or maple syrup for a vegan version. Be cautious with pectin to avoid over-thickening.
