- 2 cups cooked brown rice
- 1 tablespoon sesame oil
- 2 tablespoons low-sodium soy sauce
- 1 cup mixed vegetables (carrots, bell peppers, peas)
- 2 eggs
- 2 green onions, finely chopped
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Prep your ingredients by gathering all the ingredients together. Dice your vegetables into small, even pieces.
- Heat up the griddle over medium heat until hot—about 375°F.
- Add the sesame oil to the griddle first, then toss in your minced garlic and sauté for about 30 seconds until aromatic.
- Throw in your diced vegetables and stir-fry for about 3-5 minutes or until slightly tender.
- Push the veggies to one side of the griddle, making space to scramble your eggs.
- Pour the beaten eggs into the cleared space and scramble them up until cooked through.
- Stir in your cooked brown rice, breaking up any clumps with your spatula.
- Pour the soy sauce over the mixture and stir well to coat everything.
- Sprinkle with chopped green onions, and add salt and pepper to taste.
