Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin.
- Mix the pumpkin puree, eggs, and olive oil in a bowl until smooth.
- Combine the dry ingredients in another bowl.
- Integrate the dry mixture into the wet mixture, folding gently until combined.
- Add in the shredded cheese and nuts/seeds, mixing just until combined.
- Fill the muffin cups about 2/3 full.
- Bake for 20–25 minutes until golden brown.
