Ingredients

- 2 cups almond flour
- 1/2 cup fresh orange juice
- 1 tablespoon grated orange zest
- 4 egg whites
- 1/2 cup honey or maple syrup
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- Sliced almonds for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Whisk together egg whites and salt until foamy.
- Add the honey (or maple syrup) gradually and whip until stiff peaks form.
- Mix almond flour and baking powder in a separate bowl.
- Fold the almond flour mixture into the egg whites gently.
- Pour in the fresh orange juice and grated zest, and fold until combined.
- Spoon mounds of batter onto the prepared baking sheet.
- Sprinkle sliced almonds on top.
- Bake for about 20-25 minutes until golden and firm.
- Cool for a few minutes before transferring to a wire rack.
Notes
For a vegan option, substitute egg whites with aquafaba. These clouds can be stored in an airtight container for up to three days.
