Description

A light and nutritious almond cloud with refreshing citrus flavors, perfect for any time of the day.


Ingredients

  • 2 cups almond flour
  • 1/2 cup fresh orange juice
  • 1 tablespoon grated orange zest
  • 4 egg whites
  • 1/2 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • Sliced almonds for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Whisk together egg whites and salt until foamy.
  4. Add the honey (or maple syrup) gradually and whip until stiff peaks form.
  5. Mix almond flour and baking powder in a separate bowl.
  6. Fold the almond flour mixture into the egg whites gently.
  7. Pour in the fresh orange juice and grated zest, and fold until combined.
  8. Spoon mounds of batter onto the prepared baking sheet.
  9. Sprinkle sliced almonds on top.
  10. Bake for about 20-25 minutes until golden and firm.
  11. Cool for a few minutes before transferring to a wire rack.

Notes

For a vegan option, substitute egg whites with aquafaba. These clouds can be stored in an airtight container for up to three days.
