- 1 tablespoon gelatin or agar-agar
- Chopped almonds (for garnish)
Instructions
- Prep your cherries: If using fresh cherries, wash and pit them. For frozen, thaw completely before using.
- Create the cherry puree: In a blender, combine your cherries with honey or maple syrup and blend until smooth.
- Mix the mousse base: In a large bowl, combine Greek yogurt and protein powder, whisk until smooth.
- Add almond extract: Stir in the almond extract to the yogurt mixture.
- Incorporate the cherry puree: Gently fold the cherry mixture into the yogurt base.
- Whip the cream: In a separate bowl, whip the cream until soft peaks form.
- Combine everything: Carefully fold the whipped cream into the cherry-yogurt mix.
- Prepare the gelatin: Dissolve gelatin according to package instructions and stir into the mousse.
- Chill: Spoon the mousse into serving cups and refrigerate for at least two hours.
- Garnish and serve: Top each mousse with cherry sauce, chopped almonds, and reserved whole cherries.
Notes
For a vegan version, replace dairy ingredients with plant-based alternatives. This mousse can be made ahead of time and kept in the fridge for up to three days.
