Description

Delightful protein-packed ganache cups filled with silky dark chocolate and juicy cherries.


Ingredients

Scale
  • 1 cup dark chocolate (70% cocoa or higher)
  • 1/2 cup coconut cream
  • 1/4 cup protein powder (chocolate or vanilla)
  • 1/2 cup dried dark cherries (or fresh)
  • 1 tsp vanilla extract
  • Pinch of sea salt

Instructions

  1. Melt the chocolate: Break up the dark chocolate into small pieces and place them in a heatproof bowl over simmering water. Stir until melted and smooth.
  2. Prepare your cups: Grease a muffin tin or silicone molds with coconut oil or use cupcake liners.
  3. Mix coconut cream: Whisk together the coconut cream and protein powder. Add almond milk if too thick.
  4. Combine the mixtures: Pour melted chocolate into the protein mixture and stir until combined. Add vanilla extract and sea salt.
  5. Fill the cups: Pour chocolate-protein mixture into prepared molds, filling them halfway.
  6. Add the cherries: Place cherries on top and lightly press them into the chocolate mixture.
  7. Top it off: Cover the cherries completely with the remaining chocolate mixture.
  8. Chill and set: Refrigerate for at least 60 minutes until firm.
  9. Unmold and serve: Pop the ganache cups out of the molds and serve as desired.
