Delightful protein-packed ganache cups filled with silky dark chocolate and juicy cherries.
Ingredients

- 1 cup dark chocolate (70% cocoa or higher)
- 1/2 cup coconut cream
- 1/4 cup protein powder (chocolate or vanilla)
- 1/2 cup dried dark cherries (or fresh)
- 1 tsp vanilla extract
- Pinch of sea salt
Instructions
- Melt the chocolate: Break up the dark chocolate into small pieces and place them in a heatproof bowl over simmering water. Stir until melted and smooth.
- Prepare your cups: Grease a muffin tin or silicone molds with coconut oil or use cupcake liners.
- Mix coconut cream: Whisk together the coconut cream and protein powder. Add almond milk if too thick.
- Combine the mixtures: Pour melted chocolate into the protein mixture and stir until combined. Add vanilla extract and sea salt.
- Fill the cups: Pour chocolate-protein mixture into prepared molds, filling them halfway.
- Add the cherries: Place cherries on top and lightly press them into the chocolate mixture.
- Top it off: Cover the cherries completely with the remaining chocolate mixture.
- Chill and set: Refrigerate for at least 60 minutes until firm.
- Unmold and serve: Pop the ganache cups out of the molds and serve as desired.
