- 1 cup Almond Flour
- 1/4 cup Melted Butter (or coconut oil)
- 2 tbsp Honey or Maple Syrup
- 2 cups Cottage Cheese (or Greek yogurt)
- 1/2 cup Freshly Squeezed Lemon Juice
- Zest of 1 Lemon
- 3 Eggs
- 1 tsp Vanilla Extract
- Fresh Berries for Topping
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the almond flour, melted butter, and honey or maple syrup in a bowl.
- Press the mixture into the bottom and up the sides of your tart pan.
- Bake the crust for 10-12 minutes until golden brown.
- Blend cottage cheese, lemon juice, lemon zest, sweetener, and eggs until smooth.
- Pour the filling into the crust evenly.
- Bake again for 25-30 minutes until the filling is set with a slight jiggle.
- Cool for 10 minutes, then refrigerate for at least an hour.
- Serve topped with fresh berries.
