Description

A refreshing, protein-packed twist on the classic lemon tart, celebrating flavors and textures in a fun, accessible way.


Ingredients

  • 1 cup Almond Flour
  • 1/4 cup Melted Butter (or coconut oil)
  • 2 tbsp Honey or Maple Syrup
  • 2 cups Cottage Cheese (or Greek yogurt)
  • 1/2 cup Freshly Squeezed Lemon Juice
  • Zest of 1 Lemon
  • 3 Eggs
  • 1 tsp Vanilla Extract
  • Fresh Berries for Topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the almond flour, melted butter, and honey or maple syrup in a bowl.
  3. Press the mixture into the bottom and up the sides of your tart pan.
  4. Bake the crust for 10-12 minutes until golden brown.
  5. Blend cottage cheese, lemon juice, lemon zest, sweetener, and eggs until smooth.
  6. Pour the filling into the crust evenly.
  7. Bake again for 25-30 minutes until the filling is set with a slight jiggle.
  8. Cool for 10 minutes, then refrigerate for at least an hour.
  9. Serve topped with fresh berries.
