Description

A luscious tropical dessert combining ripe mangoes and passion fruit puree with Greek yogurt for a creamy, protein-packed treat.


Ingredients

  • 2 medium-sized ripe mangoes
  • 1/2 cup passion fruit puree
  • 1 cup Greek yogurt
  • 23 tablespoons honey or maple syrup
  • 1 tablespoon gelatin or vegan alternative
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the mangoes by peeling and cutting them into chunks.
  2. Make the passion fruit puree by blending or using pre-made puree.
  3. Blend Greek yogurt, honey, lemon juice, vanilla extract, and mango chunks until smooth.
  4. Prepare the gelatin by sprinkling it over cool water in a small bowl to bloom.
  5. Mix in the gelatin by gently heating until melted, then combine with the mango mixture.
  6. Chill in serving cups for at least 4 hours until set.
  7. Serve with additional passion fruit pulp, sliced mango, or toasted coconut if desired.

Notes

This recipe can be made vegan by substituting Greek yogurt with coconut yogurt and using agar-agar instead of gelatin. It can also be made ahead of time and stored in the refrigerator for up to 5 days.
