For the Shrimp:
1 lb shrimp, peeled and deveined
1 tbsp olive oil
1 tbsp hot honey
1 tbsp Cajun or blackened seasoning
For the Salad:
4 cups chopped kale or romaine
1 avocado, sliced
1/2 cup grilled corn (fresh or frozen)
1/4 cup grated parmesan (optional)
Caesar dressing (store-bought or homemade)
Toss shrimp with olive oil, blackened seasoning, and hot honey.
Sear in a hot skillet (or grill) for 2–3 minutes per side until nicely charred and cooked through.
In a large bowl, toss greens with Caesar dressing.
Top with shrimp, avocado slices, grilled corn, and parmesan if desired.
Drizzle a little more hot honey for extra kick and enjoy immediately.
