Description

Delicious mac and cheese transformed into adorable, portable muffins for meal prep, snacks, or gatherings!


Ingredients

  • 2 cups Pasta (uncooked)
  • 2 cups Sharp Cheddar Cheese (shredded)
  • 1 cup Milk
  • 2 large Eggs
  • 4 tablespoons Butter (melted)
  • 1 cup Breadcrumbs (for topping)
  • Salt (to taste)
  • Black Pepper (to taste)
  • Optional add-ins: Cooked Bacon or Ham, Chopped Broccoli or Spinach, Hot Sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil a pot of salted water and cook the pasta until al dente (about 7-8 minutes). Drain and set aside.
  3. Prep your muffin tin by greasing it with non-stick spray.
  4. Make the cheese sauce by combining shredded cheese, melted butter, and milk in a mixing bowl. Stir in the eggs.
  5. Combine the cooked pasta with the cheese sauce until each piece is coated.
  6. Season with salt and pepper to taste.
  7. Spoon the mixture into the muffin tin, filling each well almost to the top.
  8. Top with reserved cheese and breadcrumbs.
  9. Bake for 20-25 minutes until golden brown.
  10. Cool for 5 minutes in the tin before transferring to a wire rack.
