Description

A heartwarming and comforting dish featuring sweet, savory, and smoky baked beans made easily in the Instant Pot.


Ingredients

  • 2 cups Dried Navy Beans (or Great Northern Beans)
  • 1 medium Onion, chopped
  • 4 slices Bacon or Smoked Turkey, chopped
  • 1 cup Ketchup
  • 1/2 cup Brown Sugar
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons Apple Cider Vinegar
  • Salt and Pepper, to taste

Instructions

  1. Prep the beans: If using dried beans, rinse thoroughly and soak in water for at least 8 hours or overnight.
  2. Sauté aromatics: Turn on your Instant Pot and select the ‘Sauté’ function. Add chopped bacon and cook until crispy.
  3. Cook the onions: Add chopped onion and sauté until translucent.
  4. Add everything else: Combine soaked beans, ketchup, brown sugar, mustard, vinegar, bacon, salt, and pepper.
  5. Pressure cook: Close lid, set pressure valve to ‘sealing,’ and select ‘Pressure Cook’ for 35 minutes.
  6. Natural release: Let the pot release pressure naturally for about 20 minutes.
  7. Final taste check: Open lid, stir, and adjust seasoning if needed.

Notes

For a vegetarian version, substitute bacon with smoked paprika or liquid smoke.
