Ingredients

- 2 cups Dried Navy Beans (or Great Northern Beans)
- 1 medium Onion, chopped
- 4 slices Bacon or Smoked Turkey, chopped
- 1 cup Ketchup
- 1/2 cup Brown Sugar
- 2 tablespoons Dijon Mustard
- 2 tablespoons Apple Cider Vinegar
- Salt and Pepper, to taste
Instructions
- Prep the beans: If using dried beans, rinse thoroughly and soak in water for at least 8 hours or overnight.
- Sauté aromatics: Turn on your Instant Pot and select the ‘Sauté’ function. Add chopped bacon and cook until crispy.
- Cook the onions: Add chopped onion and sauté until translucent.
- Add everything else: Combine soaked beans, ketchup, brown sugar, mustard, vinegar, bacon, salt, and pepper.
- Pressure cook: Close lid, set pressure valve to ‘sealing,’ and select ‘Pressure Cook’ for 35 minutes.
- Natural release: Let the pot release pressure naturally for about 20 minutes.
- Final taste check: Open lid, stir, and adjust seasoning if needed.
Notes
For a vegetarian version, substitute bacon with smoked paprika or liquid smoke.
