- Cilantro (for garnish)
Instructions
- Marinate the Chicken: In a large bowl, combine the chicken breasts, olive oil, lime juice, garlic powder, cumin, and chopped jalapeños. Mix everything well, ensuring the chicken is fully coated in the marinade.
- Preheat the Blackstone: Preheat your Blackstone griddle to medium-high heat (about 400°F).
- Cook the Chicken: Once the griddle is hot, add your marinated chicken breasts. Cook each side for about 5-7 minutes, or until the internal temperature reaches 165°F.
- Add the Corn: While the chicken is cooking, toss fresh or frozen corn onto the griddle.
- Combine and Serve: Remove the chicken from the griddle and let it rest for a few minutes before slicing. Toss the cooked corn with a splash more of lime juice, salt, and cilantro.
Notes
Letting the chicken marinate overnight enhances the flavors significantly. This dish can also be served with warm tortillas for a taco-style meal.
