Instructions

  1. Marinate the Chicken: In a large bowl, combine the chicken breasts, olive oil, lime juice, garlic powder, cumin, and chopped jalapeños. Mix everything well, ensuring the chicken is fully coated in the marinade.
  2. Preheat the Blackstone: Preheat your Blackstone griddle to medium-high heat (about 400°F).
  3. Cook the Chicken: Once the griddle is hot, add your marinated chicken breasts. Cook each side for about 5-7 minutes, or until the internal temperature reaches 165°F.
  4. Add the Corn: While the chicken is cooking, toss fresh or frozen corn onto the griddle.
  5. Combine and Serve: Remove the chicken from the griddle and let it rest for a few minutes before slicing. Toss the cooked corn with a splash more of lime juice, salt, and cilantro.

Notes
