Ingredients

- 6–8 medium-sized ripe tomatoes
- 1 pie crust
- 2 tablespoons Dijon mustard
- 1/4 cup fresh basil, chopped
- 1–2 cups shredded cheese (cheddar and mozzarella)
- Salt and pepper, to taste
- 2 large eggs
- 1/2 cup green onions, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the tomatoes by slicing them thinly and sprinkling with salt; let them sit for 10-15 minutes.
- Make the pie crust by rolling out homemade dough or pressing store-bought into a 9-inch pie dish.
- Layer a thin layer of Dijon mustard over the crust, followed by sliced tomatoes, basil, green onions, and cheese in alternating layers.
- Whisk the eggs with salt, pepper, and remaining basil, then pour over the layered ingredients.
- Bake for 35-40 minutes until golden and bubbly.
- Cool for 10-15 minutes before serving.
Notes
Garnish with fresh basil or sour cream and serve with a salad.
