Description

Ingredients

  • 68 medium-sized ripe tomatoes
  • 1 pie crust
  • 2 tablespoons Dijon mustard
  • 1/4 cup fresh basil, chopped
  • 12 cups shredded cheese (cheddar and mozzarella)
  • Salt and pepper, to taste
  • 2 large eggs
  • 1/2 cup green onions, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the tomatoes by slicing them thinly and sprinkling with salt; let them sit for 10-15 minutes.
  3. Make the pie crust by rolling out homemade dough or pressing store-bought into a 9-inch pie dish.
  4. Layer a thin layer of Dijon mustard over the crust, followed by sliced tomatoes, basil, green onions, and cheese in alternating layers.
  5. Whisk the eggs with salt, pepper, and remaining basil, then pour over the layered ingredients.
  6. Bake for 35-40 minutes until golden and bubbly.
  7. Cool for 10-15 minutes before serving.

Notes

Garnish with fresh basil or sour cream and serve with a salad.
