Description

A flavorful twist on comfort food combining flaky biscuits, savory beef (or chicken), and a medley of veggies, all cooked to cheesy perfection.


Ingredients

  • Ground Beef or Chicken (1 pound)
  • Biscuit Dough (2 cans)
  • Onion (1 medium, diced)
  • Bell Peppers (1 cup, diced)
  • Corn (1 cup, frozen or fresh)
  • Black Beans (1 can, drained and rinsed)
  • Shredded Cheddar Cheese (1 cup)
  • Taco Seasoning (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Egg (1, beaten)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat and add ground beef or chicken, cooking until browned, about 5–7 minutes.
  3. Add diced onion, bell peppers, and garlic; sauté for another 3–4 minutes until tender.
  4. Stir in corn, black beans, and taco seasoning, allowing to cook for an additional 2 minutes.
  5. Prepare biscuit dough according to package instructions or roll it out to about ½-inch thick if homemade.
  6. Pour the meat and veggie mixture into a greased pie dish and layer the biscuit dough over the top.
  7. Sprinkle shredded cheddar cheese over the biscuit layer.
  8. Brush the surface of the biscuits with the beaten egg.
  9. Bake for 25–30 minutes or until the biscuit top is fluffy and golden brown.
  10. Cool for a few minutes before serving.

Notes

Serve with sour cream and pico de gallo for added flavor.
