Ingredients
- Ground Beef or Chicken (1 pound)
- Biscuit Dough (2 cans)
- Onion (1 medium, diced)
- Bell Peppers (1 cup, diced)
- Corn (1 cup, frozen or fresh)
- Black Beans (1 can, drained and rinsed)
- Shredded Cheddar Cheese (1 cup)
- Taco Seasoning (2 tablespoons)
- Garlic (2 cloves, minced)
- Egg (1, beaten)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a large skillet over medium-high heat and add ground beef or chicken, cooking until browned, about 5–7 minutes.
- Add diced onion, bell peppers, and garlic; sauté for another 3–4 minutes until tender.
- Stir in corn, black beans, and taco seasoning, allowing to cook for an additional 2 minutes.
- Prepare biscuit dough according to package instructions or roll it out to about ½-inch thick if homemade.
- Pour the meat and veggie mixture into a greased pie dish and layer the biscuit dough over the top.
- Sprinkle shredded cheddar cheese over the biscuit layer.
- Brush the surface of the biscuits with the beaten egg.
- Bake for 25–30 minutes or until the biscuit top is fluffy and golden brown.
- Cool for a few minutes before serving.
Notes
Serve with sour cream and pico de gallo for added flavor.
