Description

A delightful combination of macaroni, pizza flavors, and fresh vegetables, perfect for summer gatherings.


Ingredients

  • 2 cups elbow macaroni
  • 1 cup pepperoni slices
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 1 cup green bell peppers, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup Italian dressing
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Cook the macaroni: Boil a pot of salted water, add elbow macaroni, and cook until al dente (7-8 minutes). Drain and cool.
  2. Prep your veggies: Chop cherry tomatoes, dice green bell peppers, and slice pepperoni.
  3. Mix the dressing: Combine Italian dressing and Parmesan cheese in a bowl, whisking together until fully combined.
  4. Combine the ingredients: In a large bowl, mix together the cooled macaroni, veggies, pepperoni, olives, and mozzarella, then drizzle the dressing over. Toss gently to coat.
  5. Taste and adjust: Sample the salad and add more dressing, salt, or pepper as desired.
  6. Chill: Cover and refrigerate for at least 30 minutes to meld flavors.
