- 2 cups elbow macaroni
- 1 cup pepperoni slices
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 1 cup green bell peppers, diced
- 1/2 cup black olives, sliced
- 1/2 cup Italian dressing
- 1/4 cup Parmesan cheese, grated
Instructions
- Cook the macaroni: Boil a pot of salted water, add elbow macaroni, and cook until al dente (7-8 minutes). Drain and cool.
- Prep your veggies: Chop cherry tomatoes, dice green bell peppers, and slice pepperoni.
- Mix the dressing: Combine Italian dressing and Parmesan cheese in a bowl, whisking together until fully combined.
- Combine the ingredients: In a large bowl, mix together the cooled macaroni, veggies, pepperoni, olives, and mozzarella, then drizzle the dressing over. Toss gently to coat.
- Taste and adjust: Sample the salad and add more dressing, salt, or pepper as desired.
- Chill: Cover and refrigerate for at least 30 minutes to meld flavors.
