Instructions

  1. Preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes, then slice them into ½-inch thick planks.
  2. Toss the sweet potato slices in a bowl with olive or coconut oil, a pinch of salt, and a generous pour of maple syrup. Spread them on a baking sheet lined with parchment paper.
  3. Roast for 25-30 minutes, flipping halfway through, until golden-brown and tender.
  4. Prepare your toppings while the sweet potatoes are roasting. Warm nut butter, slice avocado and fruits as needed.
  5. Assemble the toast by spreading nut butter on the roasted sweet potato slices and adding your chosen toppings.
