- 1/4 cup Maple Syrup
- 2 tablespoons Olive Oil or Coconut Oil

- Greek Yogurt or Vegan Yogurt for topping

Instructions
- Preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes, then slice them into ½-inch thick planks.
- Toss the sweet potato slices in a bowl with olive or coconut oil, a pinch of salt, and a generous pour of maple syrup. Spread them on a baking sheet lined with parchment paper.
- Roast for 25-30 minutes, flipping halfway through, until golden-brown and tender.
- Prepare your toppings while the sweet potatoes are roasting. Warm nut butter, slice avocado and fruits as needed.
- Assemble the toast by spreading nut butter on the roasted sweet potato slices and adding your chosen toppings.
- Drizzle with more maple syrup and sprinkle with chopped nuts or seeds for added crunch.
