Ingredients

  • For the Protein-Packed Berry Parfaits: Greek yogurt, Mixed berries, Honey or maple syrup, Granola

Instructions

  1. Prep the tofu: Drain the silken tofu and place it in a blender.
  2. Melt the chocolate: Place dark chocolate into a microwave-safe bowl and heat it gently.
  3. Blend the ingredients: Add cocoa powder, maple syrup, vanilla extract, and melted chocolate to the tofu.
  4. Chill: Transfer the mixture into a bowl and refrigerate it for at least an hour.
  5. Blend the cottage cheese: Combine cottage cheese, lemon juice, lemon zest, honey, and vanilla extract in a food processor.
  6. Prepare the crust: Mix almond flour with a touch of melted coconut oil and honey.
  7. Assemble the cheesecake cups: Pour the cottage cheese mixture on top of the crust and refrigerate.
  8. Layer the yogurt: Start by adding a layer of Greek yogurt to the bottom of a glass.
