Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.
- Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, ground cinnamon, ground cloves, and salt.
- Combine the wet ingredients: In another bowl, mix the melted butter, granulated sugar, and brown sugar until creamy. Then, add the apple cider and eggs, and whisk until smooth.
- Add the wet to the dry: Pour the wet mixture into the dry ingredients and gently fold them together with a spatula.
- Scoop into prepared muffin tin: Use a cookie scoop or a 1/4 cup measuring cup to fill each muffin cup about 2/3 of the way full.
- Prepare the topping: In a small bowl, combine the brown sugar and cinnamon, then sprinkle this mixture on top of each muffin.
- Bake: Pop the muffin tin into the preheated oven and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
