Instructions

  1. Prepare the Praline: Begin by toasting the hazelnuts in a medium skillet over medium heat, stirring constantly for about 5–7 minutes, until they become fragrant and golden.
  2. Make the Sugar Syrup: In a saucepan, add the granulated sugar and a splash of water. Heat over medium until the sugar dissolves and turns into a syrup, about 10–12 minutes.
  3. Combine Hazelnuts: Fold in the toasted hazelnuts and salt into the sugar syrup. Pour the mixture onto a parchment-lined baking sheet.
  4. Make the Protein Cloud: Whip the cream until soft peaks form. In another bowl, mix the protein powder, vanilla extract, and cocoa powder.
  5. Incorporate the Cream: Fold the whipped cream into the dry mixture until fully combined.
  6. Assemble the Dessert: Break the cooled praline into pieces and layer it with the cloud mixture in a serving dish.
  7. Final Touches: Top with additional whipped cream and sprinkle more crushed praline for decoration.
