Description

A cozy and creamy twist on the classic BLT sandwich, this soup combines savory bacon, fresh tomatoes, and a touch of basil for a comforting meal any time of year.


Ingredients

  • 8 slices Bacon
  • 1 medium Onion, diced
  • 4 cloves Garlic, minced
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 28 oz Canned diced tomatoes
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1/2 cup Fresh basil, chopped
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Reserve 2 tablespoons of bacon grease.
  2. Sauté the onion, carrots, and celery in the reserved bacon grease for about 5 minutes until softened. Add garlic and cook for another minute.
  3. Add the diced tomatoes (including liquid) and simmer for about 5 minutes.
  4. Pour in the broth and bring to a gentle boil. Reduce heat and let simmer for 15-20 minutes.
  5. Blend the soup with an immersion blender to your desired consistency.
  6. Stir in the heavy cream and basil, heating through for 5 more minutes. Season with salt and pepper to taste.
  7. Crisp up reserved bacon and use as a topping.

Notes

Great served with toasted sourdough bread. Feel free to experiment with variations such as adding cheese or using plant-based bacon.
