A cozy and creamy twist on the classic BLT sandwich, this soup combines savory bacon, fresh tomatoes, and a touch of basil for a comforting meal any time of year.

- 8 slices Bacon
- 1 medium Onion, diced
- 4 cloves Garlic, minced
- 2 medium Carrots, diced
- 2 stalks Celery, diced
- 28 oz Canned diced tomatoes
- 4 cups Chicken or vegetable broth
- 1 cup Heavy cream
- 1/2 cup Fresh basil, chopped
- Salt and pepper to taste
- Pinch of red pepper flakes (optional)
Instructions
- Cook the bacon in a large pot over medium heat until crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Reserve 2 tablespoons of bacon grease.
- Sauté the onion, carrots, and celery in the reserved bacon grease for about 5 minutes until softened. Add garlic and cook for another minute.
- Add the diced tomatoes (including liquid) and simmer for about 5 minutes.
- Pour in the broth and bring to a gentle boil. Reduce heat and let simmer for 15-20 minutes.
- Blend the soup with an immersion blender to your desired consistency.
- Stir in the heavy cream and basil, heating through for 5 more minutes. Season with salt and pepper to taste.
- Crisp up reserved bacon and use as a topping.
Notes
Great served with toasted sourdough bread. Feel free to experiment with variations such as adding cheese or using plant-based bacon.
