Description

Delicious blueberry cream cheese muffins that are easy to make and perfect for breakfast.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 1 large egg
  • 1/2 cup milk (any kind)
  • 1 cup fresh blueberries
  • 4 oz cream cheese (softened)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a standard 12-cup muffin tin with grease or liners.
  3. Mix the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  4. Combine the melted butter, egg, and milk in another bowl.
  5. Mix the wet ingredients into the dry mixture until just combined.
  6. Add the blueberries and blend the cream cheese until smooth, then fold into the batter.
  7. Fill each muffin cup about 2/3 full.
  8. Bake for 18–22 minutes until golden brown.
  9. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

For a vegan option, replace the egg with a flax egg and use plant-based milk and cream cheese.
