Delicious blueberry cream cheese muffins that are easy to make and perfect for breakfast.
Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter (melted)
- 1 large egg
- 1/2 cup milk (any kind)
- 1 cup fresh blueberries
- 4 oz cream cheese (softened)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare a standard 12-cup muffin tin with grease or liners.
- Mix the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Combine the melted butter, egg, and milk in another bowl.
- Mix the wet ingredients into the dry mixture until just combined.
- Add the blueberries and blend the cream cheese until smooth, then fold into the batter.
- Fill each muffin cup about 2/3 full.
- Bake for 18–22 minutes until golden brown.
- Cool in the pan for 5 minutes before transferring to a wire rack.
Notes
For a vegan option, replace the egg with a flax egg and use plant-based milk and cream cheese.
