Instructions
- Prep the Corn: If using fresh corn, carefully slice the kernels off the cobs.
- Mix the Dry Ingredients: Whisk together the flour, baking powder, salt, and pepper in a mixing bowl.
- Whisk the Wet Ingredients: Beat the egg in a separate bowl, then add the milk and mix well.
- Combine Wet and Dry: Pour the wet mixture into the dry ingredients and gently fold them together.
- Add the Corn: Carefully fold in the sweet corn using a spatula.
- Heat the Oil: In a large skillet, heat about ½ inch of oil over medium-high heat.
- Fry the Fritters: Drop spoonfuls of batter into the hot oil and fry for 2-3 minutes on each side until golden brown.
- Drain and Serve: Remove fritters from oil and place on a paper towel-lined plate.
