Ingredients

Scale
  • 2 cups Fresh Sweet Corn
  • 1 cup All-Purpose Flour
  • 1 large Egg
  • ½ cup Milk
  • 1 teaspoon Baking Powder
  • ¼ cup Green Onions, finely chopped
  • Salt and Pepper, to taste

Instructions

  1. Prep the Corn: If using fresh corn, carefully slice the kernels off the cobs.
  2. Mix the Dry Ingredients: Whisk together the flour, baking powder, salt, and pepper in a mixing bowl.
  3. Whisk the Wet Ingredients: Beat the egg in a separate bowl, then add the milk and mix well.
  4. Combine Wet and Dry: Pour the wet mixture into the dry ingredients and gently fold them together.
  5. Add the Corn: Carefully fold in the sweet corn using a spatula.
  6. Heat the Oil: In a large skillet, heat about ½ inch of oil over medium-high heat.
  7. Fry the Fritters: Drop spoonfuls of batter into the hot oil and fry for 2-3 minutes on each side until golden brown.
  8. Drain and Serve: Remove fritters from oil and place on a paper towel-lined plate.

Notes

Serve with zesty lime, sour cream, or a refreshing dip. Consider variations like adding cheese or spices for extra flavor.
