- Gluten-Free Flour Blend
- Unsalted Butter (or Coconut Oil)
- 1 Egg (or Flax Egg)
- Ice-Cold Water
- Salt
- Filling of Your Choice (e.g., seasoned ground beef, sautéed spinach, feta, and chickpeas)
Instructions
- Combine the gluten-free flour blend and salt in a large bowl.
- Add the cold butter (or coconut oil) and work it into the flour until it resembles coarse crumbs.
- Whisk the egg and ice water together in a separate bowl, then add to the flour mixture.
- Knead gently for a minute on a floured surface, wrap in plastic, and chill for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the chilled dough on a floured surface to about 1/8 inch thick and cut out circles.
- Spoon a tablespoon of filling onto one half of each round and moisten the edges.
- Fold over and press to seal, crimping with a fork.
- Bake for 20-25 minutes or until golden brown.
Notes
Serve warm with zesty chimichurri or salsa verde for an extra flavor boost. These empanadas can be made vegan and can also be frozen uncooked.
