Ingredients

  • ½ cup Pumpkin Puree
  • 1 cup Spinach, chopped
  • 4 large Tortilla Wraps
  • ½ cup Cheddar Cheese, shredded
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • 1 tablespoon Olive Oil
  • Hot Sauce (optional, for serving)

Instructions

  1. Prep your ingredients by gathering them and chopping the spinach.
  2. Whisk the eggs in a medium bowl until well combined.
  3. Sauté the spinach in a skillet with olive oil until wilted.
  4. Add the egg mixture and pumpkin puree to the skillet and cook until eggs are set.
  5. Warm the tortilla wraps in the microwave or skillet.
  6. Build your wrap by adding the egg mixture and cheese to the center of the tortilla.
  7. Roll the tortilla tightly around the filling.
  8. Finish on the skillet for an extra crispy touch, if desired.
