- ¾ cup Granulated Sugar

- ½ cup Milk
- ⅓ cup Vegetable Oil
- 1 large Egg
- Zest from 1 large Lemon
- 1 cup Fresh Blueberries
Instructions
- Preheat your oven to 375°F (190°C).
- Line a muffin tin with paper liners or grease lightly with cooking spray.
- Whisk together the flour, sugar, baking powder, and salt in a large mixing bowl.
- Whisk together the milk, oil, egg, and lemon zest in a separate bowl.
- Pour the wet ingredients into the dry ingredients and mix gently until combined.
- Fold in the blueberries with a spatula.
- Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake for about 18-20 minutes, or until a toothpick comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack.
Notes
For a lighter option, consider using almond milk or unsweetened applesauce as a substitute for oil.
