Description

A comforting bowl of soup made with cabbage, fresh dill, and bright lemon flavors, perfect for chilly evenings.


Ingredients

  • 1 medium Cabbage
  • 2 medium Carrots
  • 2 stalks Celery
  • 1 large Onion
  • 3 cloves Garlic
  • 45 cups Chicken or vegetable broth
  • a generous handful Fresh dill
  • 1 large Lemon
  • 2 tbsp Olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add in the chopped onion and sauté until translucent (about 5 minutes).
  2. Add the garlic: Toss in the minced garlic and sauté for an additional minute until fragrant, scrapping the bottom of the pot to prevent sticking.
  3. Stir in the chopped carrots, celery, and shredded cabbage. Cook for about 5-7 minutes until slightly softened.
  4. Pour in the broth and bring to a gentle boil. Reduce to low and let it simmer for about 25 minutes.
  5. Add the freshly chopped dill, lemon zest, and lemon juice. Season with salt and pepper to taste.
  6. Taste the soup before serving and adjust seasoning as needed.

Notes

Garnish with a sprig of fresh dill and serve with crusty bread or grilled cheese.
