A comforting bowl of soup made with cabbage, fresh dill, and bright lemon flavors, perfect for chilly evenings.
Ingredients

- 1 medium Cabbage
- 2 medium Carrots
- 2 stalks Celery
- 1 large Onion
- 3 cloves Garlic
- 4–5 cups Chicken or vegetable broth
- a generous handful Fresh dill
- 1 large Lemon
- 2 tbsp Olive oil
- Salt and pepper to taste
Instructions
- Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add in the chopped onion and sauté until translucent (about 5 minutes).
- Add the garlic: Toss in the minced garlic and sauté for an additional minute until fragrant, scrapping the bottom of the pot to prevent sticking.
- Stir in the chopped carrots, celery, and shredded cabbage. Cook for about 5-7 minutes until slightly softened.
- Pour in the broth and bring to a gentle boil. Reduce to low and let it simmer for about 25 minutes.
- Add the freshly chopped dill, lemon zest, and lemon juice. Season with salt and pepper to taste.
- Taste the soup before serving and adjust seasoning as needed.
Notes
Garnish with a sprig of fresh dill and serve with crusty bread or grilled cheese.
