Ingredients

  • 2 Fresh vanilla beans
  • 1 cup Protein powder
  • 1 cup Greek yogurt
  • 4 oz Cream cheese (softened)
  • 2 tbsp Honey or maple syrup
  • 2 tbsp Coconut oil (melted)
  • 1 tbsp Gelatin or agar-agar
  • Pinch of Salt

Instructions

  1. Prepare the gelatin: Sprinkle gelatin over ¼ cup of cold water and let it sit for about 5 minutes until it blooms.
  2. Mix the base: In a medium bowl, combine Greek yogurt, softened cream cheese, protein powder, honey, and the scraped seeds from the vanilla beans.
  3. Melt the coconut oil: In a small saucepan over low heat, melt the coconut oil. Stir this into the yogurt mixture.
  4. Incorporate gelatin: Heat the bloomed gelatin gently until it dissolves completely, then pour it into the yogurt mixture while stirring continuously.
  5. Chill it out: Pour the mixture into molds and refrigerate for at least 2-3 hours until fully set.
  6. Pop ‘em out: Remove the spheres from the molds by twisting or using a warm knife around the edges.
  7. Serve and enjoy: Serve the spheres plain or with fresh fruit, drizzled chocolate, or nuts.
