Description

Ingredients

  • 4 Chicken Thighs (or Breasts)
  • 1 cup Long Grain White Rice
  • 2 cups Chicken Broth
  • 2 cups Mixed Vegetables (peas, carrots, corn)
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Thyme
  • Salt and Pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the onion in olive oil until translucent, about 3-4 minutes. Add garlic and sauté for another minute.
  3. Brown the chicken in the pan for 5 minutes on each side until golden brown.
  4. Combine the rice, chicken broth, mixed vegetables, thyme, salt, and pepper with the chicken.
  5. Set to simmer, cover the pan, and transfer to the oven. Bake for 25-30 minutes.
  6. Check for doneness, let rest for 5-10 minutes before serving.
