- 4 Chicken Thighs (or Breasts)
- 1 cup Long Grain White Rice
- 2 cups Chicken Broth
- 2 cups Mixed Vegetables (peas, carrots, corn)
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 2 tablespoons Olive Oil
- 1 teaspoon Thyme
- Salt and Pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté the onion in olive oil until translucent, about 3-4 minutes. Add garlic and sauté for another minute.
- Brown the chicken in the pan for 5 minutes on each side until golden brown.
- Combine the rice, chicken broth, mixed vegetables, thyme, salt, and pepper with the chicken.
- Set to simmer, cover the pan, and transfer to the oven. Bake for 25-30 minutes.
- Check for doneness, let rest for 5-10 minutes before serving.
Notes
Feel free to customize with different vegetables or add cheese towards the end of baking for a cheesy variation.
